Thanks! I'll try that. Did you add them to the kimchi when making it,

or to already fermented kimchi?

As to saltines, though, they are made with trans-fats, though I

supposed brands sold at natural foods stores might not be. I'm trying

to find a good and easy gluten-free cracker recipe, too.

Thanks, Carolyn. The chart in this article looks useful. The

dehydrated crackers I've tried weren't that good, but they were flax-

based, maybe the walnut version is better. I'll give it a try. I

decided to experiment with nut flour, coconut flour, and possibly

sprouted wheat. If it works out, I'll let you know.
