Also, potatoes are my weakness, but if I were fighting cancer I'd want to avoid starch and go for non-starchy vegetables, based on the idea that sugars feed tumors, and starches quickly break down into glucose. Potatoes at every meal seems a bit much. Also, I believe the RDA's are *minimum* levels to avoid out-and-out deficiency, it doesn't necessarily mean your mother has to limit her protein to 60 grams a day. Just a thought. You are right to give her all those nice fats and bone broths. A nice dish to get the mouth-feel of potatoes at way fewer carbs is to steam and mash cauliflower, adding good quality butter, cream cheese, sea salt, whatever herbs you like, garlic, a little lemon juice. Some Frontier yeast tastes good with it. That sates the potato urge in me. Or even mash steamed potatoes and cauliflower together to start, to wean off potatoes. Just an idea. Brassicas are supposed to have anti- cancer compounds, as well. The primal body-primal mind blog has this and other wonderful low-carb recipes (not steaks and burgers). Also, I believe dark leafy greens such as kale are good sources of magnesium, no? Kombucha is an acquired taste, but my 80-year-old mother learned to like it quickly when she visited me. I'm experimenting with double- fermentation, where you take kombucha that's just finished fermenting, or maybe a little too tart, and put in a separate container (that is, not with the mother) and about 2.5 oz of fruit juice per quart of kombucha, cap the jar and let it sit out a couple of days until the fruit sugar is metabolized. I have a reference for the exact directions from the food renegade blog if you want me to find it and forward to you. Best wishes for your mother's recovery.
