As I have been building a new dehydrator, I have been thinking about carbs in

the diet, because I'm trying to decide which to take the trouble to pasturize.

Many vegetable foods contain enzymes which convert said veg to starch over time

in dry storage (if the veg are not heated during drying to kill the enzmes).

So, a seasonal increase in starch consumption would be inevitable in prehistoric

cultures which relied on dried foods part of the year. So perhaps the

adaptation which allowed us to eat more carbs seasonally effects populations

differently, now that so many eat SAD and carb heavy, year round.
