Guest guest Posted August 3, 2009 Report Share Posted August 3, 2009 Hi , I can understand wanting to make your husband less resistant to changes by making a " better " version of his old favorites, but in general, rather than fixing a bad old recipe, I just try to learn to use better ingredients in delicious ways. They may not make the same old recipes, you may need to learn to eat some new dishes. That said, I've never made doughnuts so these are just guesses but... Fried starches just aren't going to be great for you no matter how you dress it up, but at least make sure you use only natural oils and fats to fry it. Deep-frying requires a lot of oil so it's expensive to use good quality fat, but lard and/or coconut oil is probably the way to go. Even unrefined peanut oil, not re-used. Just stay away from soybean oil, canola oil, other pufa oils (polyunsaturated fatty acids), which are harmed by heat and too high in Omega 6. Not good for you even if not heated though. See the Weston A. Price Foundation website for articles galore on oils and fats. Getting the oils right will avoid the worst damage from traditional doughnuts. It's still a lot of carbohydrate, though, which may contribute to metabolic syndrome. Ideally you'd soak and sprout the flour and do a slow sourdough rise to make the gluten as digestible as possible. Try incorporating part coconut flour; not sure how nuts flours would work. And don't add too much sugar. Let us know if you come up with anything!
