horseradish sausage recipe??

We've got lots of horseradish in the yard (started from a small root I got in

the grocery store). I was thinking it would be a good ingredient in beef

sausage - any one ever hear of a recipe like that?

We just topped a chuck roast with it and it's got me ready for more

horseradish/beef combos! YUM!
