I hear the old brands are making it back on the shelves, but are a weaker formulation. I have served as a consultant ofr soem major kombucha brewers, as well as small local brewers. What is back on the shelves, and more ot be added soon, will be for the large part something else. With the exception of Vibranz and Katalyst and High Country. Vibranz, appeasr to be following what GT had (a lactobacillius bacteria ferment) and is as most are saying " watered down " . Katalyst and High Country appear to both be brewing kombucha in the traditiioanl acetobactor (bacteria) ferment. Katalyst is using a new alcohol removal method which produces a really true non alcohol kombucha in a bottle. There are other local brewers, mainly at Farmers markets and local HFS, that continue to bring out real kombucha tea. But I do advise to ask questions and insist on " truth in labeling " . I gather that they're putting more sugar to compete with the energy...sapping...drinks and weaker strength to give people less for the same price (same as raising price). The Vibranz sucked--just like watered down juice with little carbonation. I don't recall seeing any notice that Vibranz was pasteurized--it was just really lame.
