The hiatal hernia thing is weird to me, you go to a chiropractor and he does this uncomfortable adjustment. I have had it done but it didn't help. If I had insurance I would try for the heidelberg test just to rule out the stomach acid issue. Do you drink any teas or coffees? The one thing that's confusing is if you don't have enough stomach acid and you drink coffee, you are making things more acidic so why does it feel worse instead of better?
