Its because the cream is cultured and turned into sour cream before churning

into butter. My guess is this would also make it slightly more digestible as

well.

Well it's pasteurized to start with. But cultured pasteurized is better than

just plain pasteurized, so it's a step in the right direction. I suspect that OP

would sell raw butter if it could be sold in more outlets. But who knows, once

they switched to UHT, they kind of sold their souls.

As for health advantages, it's got probiotics and tastes a bit sour. I like

cultured butter, but my wife does not.

They also sell a seasonal, Spring Butter.

I think you're confusing Organic Valley with Organic Pastures. OP is raw and OV

is pasteurized.

Oh, you must mean Organic VALLEY. Organic Pastures is Mark McAfee's raw milk

business, which does sell raw butter (though I hear it's nasty).
