Guest guest Posted September 6, 2000 Report Share Posted September 6, 2000 Gringo chicken salad Makes 12 servings 4 cups chopped, cooked chicken 2 cups shredded sharp cheddar cheese 1 (16-ounce) can black beans, drained and rinsed 1/2 cup chopped purple or Vidalia onion 1/2 cup sliced ripe olives 1/2 cup chopped red bell pepper 1/2 cup mayonnaise 1/2 cup sour cream 1 teaspoon chili powder 1/2 teaspoon ground cumin 1/4 teaspoon dried basil Salt and pepper, to taste In a large bowl, combine chicken, cheese, beans, onion, olives and red pepper. In a small bowl, stir together mayonnaise, sour cream, chili powder, cumin, basil, salt and pepper. Stir into the chicken mixture until mixture is well-coated. Cover and chill.
