I lost mine when I was 37 years old, 23 years ago and I still grieve for her and miss her. You were fortunate that you had that week with her. No one in this world can give you the same kind of love your mother did. Please know that I send heartfelt sympathy to you. As far as comfort foods go, think about what your favorites were when you were growing up. How about chicken noodle soup? Try it without the noodles with loads of chicken. I always loved custard, so one could try making that with half and half and splenda. Try a mind game: think that your mom would want you to stick with your LC WOE, and do it for her wishes right now. I don't have any advice about comfort food. I love flavored decaf coffees with sugar free syrup, cream and homemade whipped cream (no sugar). I guess that is my " comfort food " of choice right now. A little dab of whipped cream on top of a hot beverage always gives me a warm fuzzy. Of course, food doesn't really comfort me... it just brings back memories of feelings of comfort I had as a child... That had to be hard and I know it takes far less for me to fall into the comfort food trap. You mentioned some very specific foods that you wanted replacements for, so here is my best shot at what to have as a replacement for each item. Some are better that others as far as taste and low carb goes, and some I have not tried myself. But here goes: Pasta - spaghetti squash with the lowest carb sauce you can find or lasagna made with cooked cabbage for noodles. Soup with lots of noodles or rice - egg drop soup is the only thing I have tried. I know there are soup recipes out there and some people say that finely chopped cauliflower reminds them of rice. Breads - Atkins rolls are as close as you get, look in the recipe link below. potato chips - pepperoni chips have both the crunch and the salt or pork rinds with dip of some type. Mashed potatoes with gravy - faux potatoes with a gravy of thickened cream or how about trying to make a gravy out of cream, broth, and a LC thickener? Hope this helps.
