Guest guest
I had a request for this, so since it was now all typed, I thought I'd pass it along. Every time I make this, everyone loves it - and it takes about 15 minutes to cook. I don't measure ingredients but his is what I use for two with a bit left over (okay, three, but two of us dont' eat much), so you can decide if and how to adjust Ingredients: 4-6 slices bacon cut into small peices half onion, chopped 4-6 mushrooms (depending on size) sliced thinly peas pasta mascarpone cheese salt to taste fresh grated parmesan cheese Start the pasta water, cuz this goes fast In a largish frying pan - cook the bacon for a few minutes. Add the onions and mushrooms and cook until soft. add the peas and cook stiring occasionally for a few minutes. Add the mascarpone - I use quite a lot - about 2/3 of the container - because we like it - use how much you like, and salt. Warm through, but keep it on low so it doesn't really boil. by now the pasta should be done. Drain it and add it to the sauce so it has a minute or so to absorb the sauce. Serve witht he grated parmesan.
