WILD RICE AND BARLEY PILAF

INGREDIENTS

- 1 tablespoon unsalted butter

- 1/2 uncooked barley

- 1/2 cup chopped onion

- 1 garlic clove, minced

- 1 (14-1/2 ounce) can low-salt chicken broth

- 1 cup water

- 1/2 cup uncooked wild rice, rinsed and drained

- 1/2 teaspoon grated fresh lemon zest

- 1/8 to 1/4 teaspoon freshly ground black pepper

DIRECTIONS

In a medium saucepan, melt butter over medium heat. Add barley and

cook, stirring occasionally, for 6 to 8 minutes or until lightly

browned. Add onion and garlic. Cook, stirring, for 2 to 3 minutes

or until crisp-tender. Add broth and water and bring to a boil.

Stir in rice, lemon zest, and pepper, and return to a boil. Reduce

heat to medium. Cover and simmer 50 to 60 minutes or until barley

and rice are tender and liquid is absorbed.
