" Lemon Meringue Cookies " As promised, here is another cookie that has no flour and are very low in calories. 1 (.3-ounce) package sugar-free lemon gelatin 1 cup sugar 6 egg whites, room temperature 1/4 teaspoon salt 1/4 teaspoon cream of tartar Preheat oven to 250 degrees F. In a small bowl, combine the lemon gelatin and sugar together. In a large bowl using your electric mixer, beat egg whites until foamy. While beating, add salt and cream of tartar. Add the gelatin/sugar mixture to the egg whites gradually (a tablespoon at a time) while beating; beat to stiff peaks. Drop batter by tablespoonfuls onto non-stick baking sheets or baking sheets that have been lined with parchment paper. Bake 90 minutes; turn off the oven, open the door slightly (secure with a wooden spoon), and allow cookies to cool in the oven. Remove from oven and store in a tightly covered (airtight) container. Yields 50 cookies Nutrition Values per Cookie Calories 24 Fat 0g Cholesterol 0g Carbs 4.6g Fiber 0 Weight Watcher Points for 1 cookie 0 points 2 cookies 1 point For variations you can use different gelatin flavors. Have you made this befor? Clarify the mistake if possibleplease. Make sure that you do let them cool in the oven with the door open! I have one recipe similar to this (from this list) that takes this long to cook and sttes you s hould let them " dry " overnight in an unopened oven. Oterwise they are kind of sticky.
