I didn't have a substitute for the reader, but I remembered a cookie recipe that does not have any flour in it at all. It is super easy to make and has only three ingredients. The original recipe was made with sugar, but I have substituted Splenda.*** The calories are about half the calories of the ones made with sugar. Please read all the instructions before making them. Amazing NO FLOUR Peanut Butter Cookies 1 cup peanut butter (crunchy or smooth) 1 large egg (or 1.7 ounces egg substitute) 1 cup of Splenda*** Combine the peanut butter, Splenda*** and egg. Mix until smooth. Roll into about walnut-sized balls. Place the balls at least 2 inches apart on an ungreased cookie sheet or line a baking sheet with parchment paper. Flatten with the tines of a fork. Turn 90 degrees and use fork again to create cross hatches on the cookies. You can use a little of the Splenda on your fork to keep it from sticking. Preheat oven to 350 degrees F (175 degrees C). Bake for about 6 or 8 minutes. Do not over bake! These cookies are best when they are still soft and just barely brown on the bottoms. Also, you can sprinkle a little Splenda*** on the cookies while still warm to give the " powdered sugar " effect. This does not make but one batch of cookies. Probably very good for " Cookie Monsters " like myself. The amount of cookies you make will depend on the size of the ball you make. I made them a little smaller than the walnut and got a dozen cookies. These cookies are something you can make to take to covered dish suppers or to a friend or family member's party. *** Before you write me about using artificial sweeteners, please note... I realize there are conflicting views on using them. The choice is yours and your doctor as whether to use them or not. Nutrition Facts Servings 12 (1 cookie per serving) Calories 138 (If you use an egg substitute the calories are 136) Fat 10.9g **** Carbs 4.1g Fiber 1.3g Weight Watcher Points 3 per cookie ****If you're concerned about the high fat content, remember peanut butter has the healthy fat in it. Over 80% of the fat in peanut butter is unsaturated, which is heart healthy and, as with all plant foods, peanut butter contains no cholesterol.
