Like you said, most people just say the words, not really meaning them. I usually say something like, don't feel like wasting energy today, or can't wait to soak in the tub later and if I feel better than that, I'll say I feel good enough to take a walk etc. Non specific, but generalizes how I feel. Hi Becky - My standard comeback is " As well as can be expected! " with a smile. They can interpret that however they want.
