I eat a lot of daikon radish, because my children and I love it so much, but have not cooked it. I make fries from celery root that are amazing! I cut into fry shape, coat in oil, sprinkle with sea salt and bake. I also make 'cottage fries' with it just buy cubing it and cooking stovetop (for a long time covered) in oil and seasoning. Also, you should definitely try adding daikon radish into soups because they have a similar texture to potatoes and taste great. I have a recipe for a mock potato salad that uses steamed cauliflower and hard boiled eggs- I have not tried it yet, but will share the recipe if it turns out! Let me know if the daikon works well! ON a sad note, I've been buying dried daikon- it is soooo good.
