I really only cook one meal a day, the rest is salads, smoothies, yogurt, veggies with dip, etc. so I'm getting better at making just enough for the one meal. I'm sorry to hear about your step-daughter's episodes. It's rather frightening at times to see what an impact diet can have on us. I realized that most of my recipes would be raw since that's when I was doing the least carbs. However, one thing that I've been making this winter is ground turkey with cauliflower and turmeric. I just brown the turkey with some garlic and onion, then throw in the cauliflower and chop it all up. I've been using fresh cauliflower that has been boiled so it's mushy, but frozen would work too. Add some turmeric and continue cooking in the skillet til it's drier (the cauliflower adds moisture when it's put it). This is great in a lettuce wrap. I imagine you could use taco seasonings instead of turmeric too. I've also been frequently grilling salmon and halibut on my little Foreman. I usually have some quinoa with it, but if you have enough veggies to go with, you probably could get by without carbs. Oh, and roasting chicken. I have a serious thing with brussels sprouts right now. So I roast chicken with carrots, brussels sprouts, and potatoes. You could skip the potatoes. I make my chicken or veggie soup with zucchini instead of potatoes as well, and my kids like it better! Some of my favorite raw recipes: ***Pesto stuffed zucchini rollups with red pepper bruschetta 1 large zucchini Pesto: ½ c fresh basil ½ c fresh flat-leaf parsley ¼ c pine nuts 1-2 garlic cloves ¼ c olive oil Bruschetta: ½ Red pepper 1 Tbs onion, chopped ½ Tbs apple cider vinegar 1 garlic clove Pinch of salt and pepper Make pesto in blender until creamy. Peel thin slices of zucchini, lay flat and spread with pesto. Roll up and place on plate. Mix ingredients for brushetta, should be chunky. Pour over rolls. ***Taco Paté 2 cups raw Almonds 1 Red pepper chopped 1/2 Onion chopped 1 Tsp. Cumin seasoning Fresh Lemon and Cilantro if desired Preparation: 1. Soak the almonds overnight. 2. Strain the almonds 3. Put all ingredients in a food processor or blender and process until almost smooth. Will keep in the refrigerator for 5 days (my note: I don't have a great food processor, so I've had to add a bit of olive oil to get things moving!) ***Sunny Honey Balls 1 Cup sunflower seed butter 1/4 cup dried coconut flakes 1/8 cup unsweetened carob powder 1/3 cup really raw honey (the sticky white stuff works best) raw sunflower seeds Mix all the ingredients except the sunflower seeds together until everything is fully incorporated. Form tablespoon sized balls with the mixture and roll each ball in the sunflower seeds to coat them fully on the outside. Refrigerate for at least 30 minutes or until the balls have firmed up some. Delish! Oh, and KALE CHIPS! Love, love, love the kale chips. They just might be the best thing raw foodists ever came up with. lol I massage mine with olive oil, then sprinkle them with a bit of salt, garlic powder, and nutritional yeast. I don't have a dehydrator anymore, so I just do them on the warm temp of my oven. The first setting after that is 200, so hopefully it's not too warm and they are still raw! I eat potatoes now and I didn't when I was raw. They aren't on the GAPS diet but they are good for my metabolic type, they are neutral pH forming in the body. I tend to break the rules a little. I like new potatoes (they're less starchy than russets) or Klamath pearls because they're only a mouthful in size and it's easy to drop them in my soup without any preparation except washing. What I don't eat many of are grains. I eat sourdough bread occasionally and brown rice once in awhile. I ferment the rice and buy the bread from an Amish farmer! Of course they have carbs. But we're talking low carb here, and it's way less than grains!
