Suggested alternatives to dairy milk are rice milk and almond milk, as you are doing, all the other nut milks, chufa milk and hemp milk. I use fruit juice instead of milk on my muesli and actually prefer it. Sorry no idea about the rice shreds which they don't have here in Spain. You quickly get acclimatised to no dairy and in fact I can't even bear the smell of it anymore. Janet To: mscured From: eliandgracesmom@... In terms of the Best Bet Diet, it is the milk protein " casein " , not lactose, that is the problem. Rice cheese, at least here in the US, still contains casein. The only " vegan " cheese I've found contains either pea protein or soy, also not allowed on BBD. You can sprout your beans to negate some of the natural toxins but no beans are approved on the BBD. Guest guest Posted March 28, 2010 Report Share Posted March 28, 2010 I got some kefir grains and I put them in a jar with milk and I leave it on the counter for about 24 hours, lid on loosely (so gas escapes and air gets in). I pour that through a plastic strainer and start the next batch with the grains. The fermented milk lasts in the refrigerator for a long time. I usally drink it faster than it spoils. Sometimes the whey separates from the curd but you can either shake it up or make cheese, salad dressing or sour cream out of the curd and use the whey for fermented vegetables. Start slowly with this because if you use a lot too soon you may have a die-off reaction as the good bacteria takes over the bad bacteria. I also make water kefir with a different culture, tabicos, and Caspian Sea yogurt, Matsoni. Goat milk makes great yogurt. Yogurt is easier to start with than kefir because it has fewer strains of probiotic bacteria.
