LOL Tiger CoolRecipes — A Dish Made in Heaven This quick, easy and delicious one-pan dinner is heaven to make, taste and clean up! INGREDIENTS 1 lb. (approx.) of chicken tenders or cutlets cut into small pieces 1 package of chorizo sausage (usually contains 2 long sausages) 3-4 tablespoons olive oil 2 tablespoons paprika 2 1/2 cups water, or 2 1/2 cups chicken stock, or 1 cup chicken stock plus 1 1/2 cups water 1 package G. Washington golden seasoning broth (only if not using any stock) 1 teaspoon curry and coriander 1/2 cup finely chopped Vidala onion 1/2 cup fat-free sour cream 1 box of rice pilaf Optional: 1-2 chipolte chile peppers dried or canned (adds terrific flavor); 1/2 teaspoon Mexican oregano RECIPE In a large skillet place 3 tablespoons olive oil. Add the chopped onions and cook for 1 minute over medium high heat. Add sausage and chicken, browning both (approximately 1-2 minutes a side). Add the spices, garlic and one more tablespoon of olive oil, and then the dried rice pilaf. Cook for another 40 seconds so that the rice can absorb the spice flavors. Slowly stir in liquid saving 1/2 cup of water if you are using dried chile peppers; otherwise just add the whole amount of liquid to the pan. Take the reserved half cup of water and place the dried chile peppers in it, cook in the microwave on high for 2 minutes. Then pour the liquid and peppers back into the pan. Cook for 20 minutes with a cover loosely placed over the pan, stirring occasionally, then add in the sour cream. Cook for 15 minutes more. Test the rice and make sure that it is cooked. Then cook for another 5-10 minutes until most of the liquid is absorbed. To serve, top with a dollop of sour cream and a splash of your favorite hot sauce. Guest guest Posted September 29, 2000 Report Share Posted September 29, 2000 H; Nope no chicken since I had surgery as a matter of fact the very first meal they served me in the hospital was a whole chicken leg and thigh (I don't know where they thought I was going to put all that food) and I took one tiny piece and chewed it up and had to spit it out because if I swallowed it would have come back up and I have stayed the same since then. However on occasion I can eat a couple of wings baked with BBQ sauce or teriyaki sauce or my favorite Popeye's with honey on it but alas there are no Popeye's in Washington State. I also can't eat spaghetti of any thickness from angel hair to linguini but I can eat shells and elbow now you want to tell me why when they are all made of the same stuff!
