I have been so busy with work the last couple of weeks trying to meet the production quotas required by our companies permits from the state. We had some electrical problems during the first part of the month and the plant was down for 4 days. We are only allowed to be down 40 hours a month. I asked if this had anything to do with it and they said no.... Thank you for the thoughts and prayers...... Dave's country must make that good stuff. I don't know about west of there. It takes something like 40 gallons of sap to make one gallon of syrup. I have done it and it's a lot of work - mostly collecting the sap (which is like water). Then you keep a hot fire going under the evaporator pans until the specific gravity is right and then you draw it off into jugs. Near the end is critical because you can burn it. I think it's my favorite time of year around here. It's perfect for hiking or biking, nice and cool and colors everywhere, the deer are running in herds yet. I quit smoking, which I'm sure helped. We all know you're tough enough to handle it, but I hope that things start to mellow out for you.
