Arnie, I love home made bread and have had oodles more luck with it

with a bread machine. I don't like the shape and size of the machine's

pan so I set a timer to let me know when the last 'punch' is done and

then I put the prepared dough into a regular loaf bake and bake it in

our oven. Its great rewards for rather little effort.

I've also learned to take more traditional dishes like lasagna and

turn these into stove top casseroles. Things like stuffed peppers

turned into 'unstuffed' peppers with the same basic taste but less

prep and cooking time required. You may also want to look into a crock

pot where you can put ingredients into it and slow simmer until dinner

time.

My favourite cookbook so far is Cooking for the Rushed by Sandi

. They are quick, easy and great tasting. The recipes are

mostly for dinner, however, I usually have leftovers for lunch the

next day. My husband and I have not been disappointed yet. They

supply you with a list of groceries you'll need for the week's

recipes and I've never had difficulty finding items.

If those of you who can bake had seen me last night you would have

got a good laugh out of it. I kept trying to find warmer places to

place the dough hoping it would rise, and it finally did rise a bit

in the last place. But the loafs came out pretty bad. It didn`t rise

enough and it was not fluffy, more doughy than normal.

But that just makes it a challenge. I have the evening free tonight,

so I`m trying again.

I just wanted to speak up on the cooking post, I am single and not a huge fan of cooking. I am normally starving by the time I get home, and don't want to waste time putting together an elaborate meal, and I hate the clean up! But I have discovered Meal Makers, which is one of those stores where you can go and make different meals to take home and cook. They also have them made up in advance, ready for takeout. What I like about it is that they have a wide variety of meals, all of which I would never cook on my own. I love the choices, and coming home to pop it into the oven for 30 minutes is something I can handle. Clean up is just a dish in the dishwasher and a disposable pan into the trash. So easy and So yummy! These types of stores are popping up all over my city, and probably in yours

too. I encourage you to try it if you have a busy lifestyle and not much time to cook!

Maybe you could do a search for "quick and easy" recipes on the net.Maybe you could also invest a few bucks in a cookbook that says "quickand easy" on the cover. Usually the recipes are REALLY quick. Cookbooks that say "students" on the cover usually also provide quick(and comparatively cheap) recipes. They tend to use some convenienceproducts though (like certain spice mixes) so it might be smart to makesure that you really can get the products in your area.I'm sometimes kind of disappointed when wanting to try new recipes yet Ican't get the products the recipe calls for (or only at a high price).Right now I'd love to try some chestnut recipes but the only pre-cookedchestnuts you can buy here are EXPENSIVE.Regardss.

Arnie, I LOVE to bake, but my hand made bread was always pretty

pathetic so a bread machine really saved me from frustration as well

as eating lousy results :) Hope you have more success with your next

attempt.

Hints - I have created 'warming' spots above refrigerators by hanging

a towel down from the cabinets above, putting a wire shelf up in a

water heater closet (above unit), on a step stool next to a wood stove

and even in a cardboard box lined with (solid) packing foam pieces and

a dark cookie sheet on top and set out in the sunlight (summer time

only). And old cooking class trick is to use the oven - filling a

shallow baking dish with HOT water and placing this under the bread

loaf pan. You may need to replace the water every 15-20 mins to keep

the temp up. Just remember that yeast like about the same 'body' temps

that we do - 85 ->110 degrees.

Hi Katcha,

If I were to bake bread on a regular basis I would get a bread

machine. Although kneeding the bread is a pretty good work out. My

abs and triceps are feeling two days of bread baking today. Thanks

for the tips on creating warm spots to let the dough rise.

My second attempt came out much better. Actually it came out pretty

darn good. Next I'll try whole wheat, or maybe some buns.

I just thought I'd share that I like FoodNetwork.com. If there is a

particular ingredient you can plug it in and you will get many

recipes for that one ingredient. I think you can also store your

favorite recipies. I've just about decided to do away with

cookbooks all together and just use the internet when I am searching

for a recipe.

Arnie, the favorite bread in this house is sour dough and I've given

up on making it - keeping a starter around is WORK, plus its not a

SOUR type starter so we are happy to buy an excellent 'San Francisco'

type french bread from a local bakery. The #2 favorite here is

poppyseed walnut which is a whole wheat bread that makes great toast

with cream cheese on it. That is one thing about a bread machine - the

recipes are 'tight' - must be dang near exactly as written or results

can 'vary' to say the least.

Good for you for 'kneeding' exercise!! That is where I always seemed

to fail - didn't want to 'play' with the dough long enough to give IT

a good work out ;-) For me the bread machine was a dough (and in $$$)

and sanity saver. Like Kip, we love pizza made with a fresh 'bread'

type crust (part rice flour for lightness) which the machine whips out

for me in 30 minutes. (while I do other things like be on my computer

- he he)

I'm an Allrecipies.com girl myself. I think everything I've tried

from there has been a home run. I'm especially a fan of the crock

pot section!
