Tina, I made ketchup when I was first on the diet in order to determine how to do it -- and I made it from fresh tomatoes, because the only ketchup-eater in my immediate family is my mother, and she's on a salt-free diet, so ketchup made with salted tomato juice would be anathema for her. The bottle 's should be OK. How long it simmers can depend on how humid it is that day. <g> If it's dry, the moisture roils away quickly.
