Well, split peas were a nemesis of mine pre-SCD, and since Harry doesn't

like them, I haven't bothered to try them.

I do pretty well with properly prepared navy pea beans.

Better is red/brown whole lentils, soaked and cooked. Best is split red

lentils. Haven't (yet) tried the French green lentils.

I make a MEAN chili with lentils!

Hi All,Speaking of lentils, I've been in the kitchen this holiday experimenting with a lentil-based bread (I do not tolerate nut flour or beans.) Thought I'd send my progress report for anyone who'd like to comment or try it themselves. Note that the recipe below isn't 100% successful yet - I'm still fiddling with the proportions of various ingredients so as to correct an end result that's either too moist, too heavy, or too eggy.That said, here's where I'm at:*Red Lentil Bread*3 cups presoaked, cooked, drained/dripped lentils2 eggs1-2 TBS butter1 1/2 tsp baking soda1/4 cup yogurt1/2 tsp saltSoak lentils overnight, pour off cloudy water and then cook them until mush. Drain excess water

and drip for 3-4 hours.Preheat oven to 350 degrees.Melt butter and cool until warm. Use a small amount to grease a bread pan, save remaining for dough.Put lentils, egg yolks, remaining butter, soda, yogurt and salt into blender. Blend until smooth.Beat egg whites until stiff peaks form. Fold egg whites into moist ingredients.Pour dough into bread pan, bake for an hour (+/-), or until top of bread is golden and bottom is cooked.I think that when I finally get the proportions right, it'll produce a bread that's light and fluffy, perfect to accompany soup.
