Guest guest Posted August 25, 2000 Report Share Posted August 25, 2000 A few people have asked me for the muffin recipe that I mentioned in an earlier post, (which I accidentally sent to the whole list, by the way), so I will go ahead and post it here. It was origionally posted to the list by Heidi a while ago. Randee MUFFINS If you are GF/CF or not, these are great! 1-1/4 c. white rice flour 1/4 c. buckwheat flour 1 tbls. GF baking powder 1/2 tsp. ground cinnamon 1/4 tsp. salt 2 large eggs (or egg replacer eq.) 1/2 c. packed light brown sugar 3/4 c. milk substitute 1/4 c. sunflower or safflower oil 1 c. finely shredded carrots (I use a puree machine to hide them ) 1/2 pkg dairy-free choc chips 1/4 c. finely chopped sunflower seeds (I use my coffe grinder to chop these) 1/4 c. finely chopped flax seed (I use my coffe grinder to chop these) Heat oven to 375* F. Use foil or paper baking cups. Mix flours, baking powder, cinnamon and salt in large bowl. Whisk eggs and brown sugar in another bowl. When smooth, whisk milk-sub. and oil. Stir in carrots, choc chips & seeds. Pour over flour mixture and fold in with a rubber spatula just until dry ingredients are moist. Scoop batter into muffin cups. Bake 20-25 mins or until springs to touch. Turn out onto rack to cool. These work well in lunches, snacks and can even be decorated as cupcakes. You can try sneaking other veggies in like broccoli, cauliflower, etc. Just be careful of the ratio so they don't taste too veggie. ENJOYMENT TO ALL!
