Guest guest Posted February 4, 2008 Report Share Posted February 4, 2008 Stuffed Chicken Rolls with Orange Sauce(serves two)1 large skinless boneless chicken breast, flattenedsalt, pepper,dried rosemary, basil, parsley and oregano to taste5 mushrooms sliced1/3 medium onion shredded2 pats butter1/4 cup almond flour1 clove garlic, smashed1 tablespoon dark raisinsSauce1 pat butter3 oz. orange juicehoney to tastePreheat oven to 350F. Heat a skillet or saute pan, add 1 pat of butter, gently saute onion, garlic and mushrooms until golden brown. Add almond flour, seasonings and raisins. Cook and stir carefully so almond flour does not scorch. Set aside. Place flattened chicken breast on a large piece of foil. Place stuffing on top and roll tightly in the foil, twisting the ends closed. Place on cookie sheet or in a loaf pan and bake in ove one hour. Cool slightly before unwrapping.Heat a small saucepan and add remaining butter, simmer until it is reduced in volume then add some honey and a few raisins if desired.
