Guest guest
Justed wanted to let you know that about a month ago I happened to come across a mention from someone on line that he had used coconut macaroons to stop his persistent diarrhea. I thought that was unlikely to work for me but as I fancied some macaroons anyway I decided to give it a go. Surprisingy it worked and in fact 2 macaroons was constipating for me, so I've since cut down to a couple of dessert spoons of shredded coconut per day. I have UC and have done very well on the diet over the last 2 years but was unable to shake a tendancy for my stools to frequently become loose (although not usually D, and no B or M). For that reason I couldn't get off the last 3 mgs of the Prednisolone I was taking. Over the last month that I have been using the coconut I have stopped using the Pred, have cut down my Colazide a little and have begun eating raw vegies without any problem. I think somehow the coconut has a slowing effect on my system and this slowing effect is beneficial for me. Or perhaps the fat is easy for me to absorb and I need it. I have noticed before that the " binding " foods like banana, cooked apple, dairy, eggs, meat etc seem to be beneficial, and the loosening foods eg raw fruit are dangerous. Not sure exactly how it works, but maybe when my system is running slower I am able to digest better. So loosening of stools is not only a consequence of the UC but also a cause of it. I wouldn't like someone relatively new to read this, plough into coconut and make themself sick, as apparently it is an advanced food. However, I wanted to pass this on so that any other experienced SCDer with remaining loose stools might be able to experiment for themselves. Please note that the first recipe, titled just " Macaroons " calls for whole nuts and chopped dates, which could be problematic for some people. Not only that, it calls for dark rum, which is illegal, and brandy, which I am wary of because some manufacturers do add sugar to it. If you are not yet ready for coconut, substitute pecan flour. — Marilyn New Orleans, Louisiana, USA Undiagnosed IBS since 1976, SCD since 2001 Darn Good SCD Cook No Human Children Shadow & Sunny Longhair Dachshund

Guest guest
The recipe I use is similar or the same as the second one Marilyn attached. My recipe is from Lucy's cookbook. I have discovered that if you make a double batch you will have 6 egg yolks left over, which is the right amount exactly for the lemon butter recipe from Grainfree Gourmet. Tastes good on the macaroons and so good it is hard not to eat it in bulk as a dessert.
