The basic ingredients in modern ketchup are tomatoes, vinegar, SUGAR, salt, allspice, cloves, and cinnamon. Onions, celery, and other vegetables are frequent additions.I have never tried making my own ketchup and this question may sound silly, but is bottled campbells tomato juice legal - the store did not have it in the can except for the low-sodium one which has other additives? Also do you follow the recipe for ketchup in the btvc book and how long does it usually simmer? Thanks. I put it in the evening, put the lit ajar and let it cook all night and most of the next day. When it is the thickness I like I add other ingredients and put in pint jars and fridge.
