Glad that the coconut milk is working for you Joy! Tell us how you are purchasing this, what company? is it that Thai company that we were speaking about before?I used to live in Puerto Rico off and on for yrs. They have these coco's they call them there, "coco leche", which means coconut milk. They were really Jelly coco's. They would store them in coolers at stands on the streets, and open the tops with their machetes. Drink it with a straw, ah so refreshing. They were not the coconuts that we get here in the states, the ones we get here, that are brown and when you poke a hole in the them, some times they would be rancid, you can eat the meat of the coconut that way, but usually the milk is off, tastes bad.The ones in Puerto Rico were young coco's. They were green, and when you were

done with the leche you opened it up and the coconut itself inside was jelly, not hard like the ones we get here. So much of a difference.After living in Puerto Rico all those yrs I don't even appreciate coconuts any more. I get disappointed when buying them. Last time I bought one for my grandson who insisted I get it, the milk was old but he was able to eat a bit of the coconut itself, which is good for your digestion every so often, I think it has some enzymes that help you digest. Well, I've been using the organic coconut milk, now, for over a month. I am happy to report, I do not miss cow's milk. I drink it by itself, at meals and I use it in my blueberry-egg smoothie. Love it, and I've had no gastric problems, since switching. The Blueberries are even giving me the amount of iron I need, so that I've cut down on meat. I am feeling more energetic and better daily. Now, to conquer my allergies from the wood burning furnace. I purchased some filter material, that you cut to fit your vents. It's what I am working on today. Joy

Well, as we talked, I had to purchase it in a can. I buy a case at a time from Amazon.com. The organic coconut milk is more expensive than coconut milk that isn't organic, but worth it. When I open a can, I take a case knife and slice it in pie wedges, lift it out and put it in a blender. Then I pour the liquid into the blender and add spring water. It has guar gum in it, to make it thick. When it's blended I pour in a jar and refrigerate.

Your green coconuts sound wonderful! So, I researched! :-) But they need to be shipped refrigerated, and 15 lbs, cost like $98.00, so I'll have to stick to my canned organic Thai coconut milk. :-(

way too costly that is for sure! Good that you found a way to get your coconut milk. It's the concentrated kind, I am guessing the way you described it. Sounds wonderful for smoothies.I had found a source that makes organic coconut flakes with no sulfites etc..in it, so I use this with almond butter and dates to make like a candy, roll it in coconut flakes.I also love coconut macaroons and will want to make them for the holidays.Coconut is a very diverse food, isn't it?
