On SCD I’ve been eating veggies galore, some that I wouldn’t have even considered before. I find that I have lot of unused pieces or halves and end up throwing them once a week into the soup kettle. I make chicken stock constantly (you an also buy very inexpensively chicken backs) and they make a quick stock. We can really get a couple days worth of meals out of a pot with veggies and a small amount of meat and or chicken. Team it with a salad (when advanced) and you are full ! Look for all the manager specials for both meats and produce. Once you add beans –you can really stretch things out. I also bake once a week – half of family not on SCD but they’ll eat my stuff since it’s so good – just gotta have it around. Buy flours and nuts in bulk.
