Unfortunately, I can't tell from the label if the product is dates and water, or dates - and - whatever. Elaine specified California dates because many dates from other locals had added sweetener. (Why anything as sweet as a date would need extra sweetening, I'm scorched if I know, but then, I don't understand why commercial broths put " cane juice " or " high fructose corn syrup " in their chicken or beef broths, either.) Basically, what you're looking for is a kind of dry touch to the dates. They shouldn't be stuck together in a mass. Guest guest Posted March 15, 2008 Report Share Posted March 15, 2008 The dates that you buy in the supermarket are sticky because they have been dipped in glucose syrup. Legal dates are dry. I buy legal dates from Morocca (I think). Anyway, they are available in a discount supermarket here. Amazing really. Can I just say with regard to vitamin C that I was buying unsweetened fruit purees with nothing added except ascorbic acid (as a preservative I take it). They gave me loose stools. Ascobic acid is the form of vitamin C that is the most difficult to deal with, but I figured that such small quantities would be ok. And it was so practical to be able to take small pots of fruit puree to work every day. Once I gave them up the loose stools disappeared overnight. I would think this might also be true for date syrup - maybe it's too concentrated. I was looking into pomegranate syrup that my Middle-Eastern friend used in a delicious recipe - the container said no sugar added - but Elaine says it's not legal, even though unsweetened pomegranate juice is legal; I'm not sure whether it's the degree of concentration or if Elaine was suspecting added sugar in the syrup.
