I understand that the Legal type can't have cream added after fermentation to get a creamier texture. We can achieve that by adding a bit of yogurt. It should be like a block that is crumbly. Still, Whole Foods here in NYC gets DCCC in large buckets and they divide/distribute it into small containers themselves- they label it without manufacturer name just date/weight/price. They say its friendship farms. Upon looking at Friendship's site I understand that they also make illegal DCCC. Is that true? Guest guest Posted January 26, 2008 Report Share Posted January 26, 2008 It is in a block shape but not that crumbly to me. I like to freeze it first so it's more like ricotta texture. It's sort of moist, not really dry. It does not look like large curds really, it's more like almost a grainy texture that will stick to your knife but will fall apart around the edges if any of that makes sense. Once you could see it, you'd see what I mean. It's nothing like regular cottage cheese though. It's more like a drier version of ricotta to me--in block form because that's how it's packaged. It is moist enough to have to go in a baggie after opening? Hope that helps, mash it with your finger on the edge (when nobody is looking) in the clear wrap and see how the consistency is maybe. Or maybe someone else can describe it better (definitely someone else could describe it). The J & J brand does seem thicker to me for some reason. I got a couple of bars when the Friendship was sold out. It's like 4.99 here. Hope any of this helps, good luck.
