I get plenty of fat from cheese, nut flours, nut butters, oils, etc. I don't think I need to be eating full fat yogurt. One thing to keep in mind that the higher the fat level, the sweeter the yogurt. With our very tart SCD yogurt, this can be a factor. Personally, I use whole milk yogurt -- and I also use cheese, nut flours, and healthy oils. Right now, I too am using half & half and whole milk, 50% each. The consistency is thick and solid, which I love. I tried to make the yogurt with 2% and it was absolutely runny! I'd like to hear from other people and their experiences with cutting out the fat, but keeping a thick consistency.
