I have major difficulties with coconut oil and all the other legal oils. I do use a light olive oil, though; first cold pressed and extra virgin. I did have some trouble with the darker olive oils. And I don't have too much of it per day or at one meal -- but that's due to my upper GI dysfunctions. Have to keep it to 1 teaspoon per meal and 2 teaspoons per day total. But when I'm sauteeing or using oil in muffin and bread recipes I do use 1 to 2 tablespoons, depending on what I'm making -- but the amount I actually swallow per meal and per day is still small. This keeps my upper GI tolerant. Kim M.
