Debbie, An opened soda isn't going to be anything but flat after a day or two, I should think. How about brewing up a very strong ginger tea and store it in the fridge? Then get some legal club soda, open a small bottle, and add a spoonful of your ginger tea. That dilutes the tea properly, and gives you both ginger and carbonation. I recommend against adding honey to club soda, though. I did it, and the club soda exploded all over me, the counter, the ceiling, AND the dachshunds. THEY thought it was another of Missy's fun games.
