Mara, I've been threatening to try it with cashew, although I haven't yet decided on a good place to order cashew flour from, and Whole Foods is WAY too expensive to order nuts to grind myself! For reasons I can't explain, I think of pecan and walnut as going with " sweet " flavors -- like cinnamon, and so forth. While almond goes with savory ones. (We'll just skip over how many sweet cakes I've made with almond flour, not to mention how many savory dishes have cinnamon or ginger in them.... <g>) I haven't YET tried it with pecan or walnut. Of course, I'm a great one to talk... I made something the other night which turned out delicious, but which wasn't at ALL what I was trying to make.
