What kind of squash were you told was too fibrous?

How well did you cook the green beans and spinach? And the zucchini?

Did you use the French cut green beans? I have always done better with

those than whole beans.

If using the fresh spinach, did you remove the thick stems before cooking

and cook completely?

Did you peel the zucchini and remove any large seeds?

<g> Squash, zucchini, green beans and spinach are my staples. I

don't really like carrots all that much! (Well, except organic

carrots.)

Hi Marilyn,

I'm sorry to hear about your loss. I told her winter squash was too fibrous for *me* but we are all different. I could eat carrots cooked until soft for a long time. I told her winter squash and pumpkin was used a lot in the beginning--I just couldn't tolerate it. Wish I could have the butternut squash fries though.

One trick for beginners is pureed spinach - first steam it, then puree

with some butter

or coconut oil and salt and whatever spices you can tolerate at that

point.

thank you for being so detailed - peppers and onions!! I never would

have tried those for years - maybe I'm just too early and need to

feel a bit better and then won't be so afraid???

thanks again
