Guest guest Posted January 30, 2008 Report Share Posted January 30, 2008 Hi Adam, As far as I remember, Elaine's book does not specifically say which "illegal" to try introducing first, after being symptom free for a long period of time. You may have to rely on common sense and experiment a bit. Seems to me if you want to use Kamut (very much like wheat but with less fiber, less gluten, but almost twice the size of regular wheat) . . . you should try a recipe that combines Kamut with other ingredients, so you don't get 100% kamut your first time out. If you're the least sensitive to wheat, not sure this is the grain to try . . . literature is ambiguous - says it can cause a highly negative reaction in wheat-sensitive people, BUT it also says "some" with wheat sensitivities can tolerate it. We have been using soaked (in yogurt and water) spelt (which like Kamut is also wheat) for three weeks and everything thus far is OK. I don't want to go all the way to ordinary wheat just yet.
