You added two items at the same time. One thing I've noticed is that while some oil is good for adding calories, going overboard on it can be a mistake. Kim, for instance, doesn't tolerate a lot of fat. How many parts juice to how many parts water?) How well cooked were the green beans? That's what I did for the first two months I was on SCD. I rotated, one food at a time. Eggs and butter for breakfast. Two hours later, 2-4 ounces of roasted meat. Two hours later, well-steamed, peeled zucchini with a bit of butter and salt. Two hours later, 2-4 ounces of the other roasted meat. Two hours later, either zucchini or eggs again. And repeat. I did add a small amount of grated cheddar to the zucchini somewhere around the end of week one or two, but you'll notice that I wasn't eating cheese each time I ate something. The legal electrolyte drink hadn't been invented yet, by I sort-of made my own with the juice and assorted minerals. How much cheddar were you actually eating? You don't want to overtax your system because that's a sure ticket to not healing. But notice that I wasn't eating much at any given time, yet over the course of 24 hours, I was consuming 6 (Jumbo) eggs, somewhere between 12 and 24 ounces of meat, and at least three cups of zucchini. This adds up to between 1885 and 2550 calories, depending on how much meat I was eating. If you go back and check one of my posts from yesterday, you'll find that a woman needs a minimum of 11 calories per pound to function. A quick check indicates that your weight should probably be between 116 and 130. That means you need between 1276 and 1430 calories at your proper weight just to keep even with what you need to expend to live. If you are at all active, you need more than that. In order to gain weight, you have to have your basic energy levels, plus your activity levels, plus enough calories to start adding weight -- and to add one pound a week, you must eat at least 500 calories a day over your maintenance + activity level. Avocados are a wonderful food, with lots of good fats in them and vitamins and so forth. Like bananas, however, they need to be ripe. Here's a link which has all you need to know about selecting, ripening, and preparing avocados. Guacamole is a great way, but not just yet, I think, since you're eating so few foods. I like avocado just ripe, sprinkled with a little salt. I have also made " Martian Pudding " out of it, with avocado, lemon juice (to keep it from turning brown), some honey or saccharin, and some vanilla extract. Are you keeping a food log about what you are eating, when you are eating it, and how much you are eating?
