Eileen, I would cook them up and then put them in the blender and freeze in ice cube trays. Then you can take out a cube and add it to soups or stews. Katy

thanks - i eat them as my only vege still though each day so want them

non pureed - have you frozen them that way???

I would grate them, make carrot muffins and freeze them.

I also make a variant on that recipe without almond butter - steamed carrots, eggs, dessicated coconut, grated lemon zest, pureed raisins, bicarb.

Eileen,

if you can tolerate almond flour, the carrot muffins in the

Grain-Free Gourmet book are delicious. I made my second

batch tonight.

If you are just starting, nut butter is better than nut flour because it is finer. If you aren't on to nuts yet, you could always leave them in the freezer until you're ready.

The other recipe I make is indeed without nut flour.
