I've been on Remicade for four years, my blood counts are dropping and I'm experiencing scary symptoms again. My doctor is suggesting going back to 6MP or trying new drugs, and I've had it! I had heard a little about the SCD and started researching last week, ordered the book and have already started eliminating all complex carbs from my diet. Question: I have a very busy work schedule with a long commute and very little time/energy to prepare meals. I can manage breakfast and dinner at home, but does anyone have any suggestions on lunch? Went to Whole Foods this weekend to buy sliced turkey--but it ALL contained carageenan (which I gather is illegal). I need a lunch menu that is realistic and quick to prepare. Any tips? Welcome to the list and to SCD. One thing about SCD is that as healing occurs, energy can come back -- I do things today that I would never have dreamed of doing seven years ago. Prosciutto, with just pork and salt is legal. Legal cheeses, sliced, work nicely. I make avocado chicken salad -- in fact my avocado chicken salad has just been approved as a " soft food " for my recovery from my upcoming cancer surgery. The neat thing about this is that you can grill and grind a bunch of chicken breasts, with seasoning, pack in bags, and freeze. Then you puree the avocados with the lemon juice, salt and pepper, and you can freeze containers of that. Then take a bag of grated chicken mix and a box of avocado mayonnaise, defrost, mix, and you have lunch for a week. If you find you tolerate nut butters fairly quickly, they're a great source of fat and protein -- I often take slices of cheddar or provolone and spread a layer of cashew, white almond, or peanut butter between slices of cheese for a " sandwich " . There are precious few processed and pre-prepared foods which are SCD legal -- and if you think about it, that's probably why the incidence of major gut problems has increased so dramatically as the quality of our food supply has declined. A couple things she recommends are marginal SCD, so it's always worthwhile to cross check legal items against the BTVC book. She's pretty scrupulous about noting which items. Guest guest Posted March 18, 2008 Report Share Posted March 18, 2008 The best tip I have is to make the wraps in the new " Grain Free Gourmet " cookbook over the weekend. I also crock pot some chicken breasts to store in the frig. Then for lunch, I grate some cheese of choice, sprinkle some chicken and roll it up in a sandwich wrap ... very easy.
