Update, second week, more questions

End of Day 9. I'm coping, and I'm cooking every day, which is a major change

for me.

Last week was extremely tiring. This week I am back to my normal low level

of energy. With myalgic encephalomyelitis, also known as chronic fatigue

immune dysfunction, I never have much energy, but this week is definitely

closer to my normal low level.

I have been C for several days, in spite of drinking prune juice (made from

prunes only, not from concentrate, and with no added anything, as

recommended in the FAQ I read about how to cope with C). I have to dilute

the prune juice with water, not orange juice, as I am very allergic to

oranges.

Question: Should I be adding lemon juice to this? Does the acid or some

other feature of citrus fruit make a difference in the effectiveness of

prune juice?

I have also been taking a lot of magnesium, but I am not sure how well I

absorb it, so I'm not sure whether it's helpful for this purpose.

Question: How can I tell whether I am consuming too little, just the right

amount, or too much yogurt and acidophilus? Does the fact that C is a

problem point to which way I need to go with the probiotics?

I desperately need fibre, so I have started eating nut butter - almond

butter, as well as some macadamia butter that had been my midnight snack

food (1 tsp serving) for the last few months, up until I started SCD.

The nut butters seem to be helping with C, so I will continue with them.

My memory has not improved at all, so I find myself writing notes about what

to cook on my appointment calendar. And still I get mixed up.

I bought a Yogourmet yogurt maker last Thursday, only to find that it heated

the water bath to about 120 F. I checked the list archives and thought the

recommendation of plugging the yogurt maker into a dimmer switch would be

easiest. Of course, I couldn't buy a dimmer switch on Friday, as all the

stores were closed. But my husband bought me a switch on Saturday, and it

has proven to be very helpful at temperature control for my second batch of

yogurt.

I converted most of the first batch of yogurt into yogurt cheese, as a

treat. I spread some on top of the yogurt-less cheesecake I had made the day

before, and it tasted very good. But now that I have the yogurt maker and

yogurt cheese, I can make the cheesecake with yogurt or yogurt cheese in the

mixture. Which is better?

I have come to the conclusion that the pecanbread stages schedule just

doesn't work for me. I am introducing vegetables and trying to introduce

fruits according to the chart, and I won't be frying anything, but that will

be the extent of it.

I have printed out some recipes for pear sauce from the pecanbread archives.

I wonder whether there is any reason for there being instructions for both

stovetop cooking and baking.

Question: Does baking the fruit produce a better result?

I have not been going out very often, but I need to figure out what to take

along to the medical appointments and meetings I have to attend in the next

few weeks. I used to take carry mozzarella cheese sticks every where, since

they were convenient. I am going to wrap some slices of Havarti cheese to

take along. I can't take boiled eggs to meetings, as there are people with

sulphur sensitivities at some of these events. I might have to invest in

some baby food jars so that I can take yogurt along.

As of this morning, I had lost 4 lb in 8 days on SCD. I never would have

believed that I could lose weight and eat cheesecake. But then I never would

have believed that I could eat cheesecake, because before BTVC, I had never

found a recipe for lactose-free cheesecake.

I have seen Lyosan probiotics mentioned on this list.

Question: are they sold in Canada? Lyosan is in Quebec, but I don't think I

saw the probiotics listed on their website.

The good news is that I am convinced that I will be able to stay on this

diet for a long time. And I am trying to persuade my husband to join me on

this. So far, he has been happy to share the chicken soup and cheesecake.

Actually, if I can get him to eat only SCD-legal desserts, even if he makes

no other changes, I believe that his health will improve.

didn't help my C. i had to stew the prunes, drinking the juice. to stew them, i just added about four or five prunes to a small pot and added water to about the midway point of the prunes and simmered for 20+ minutes. eating the prunes this way, usually gives me a BM that day.I have also been taking a lot of magnesium, but I am not sure how well I absorb it, so I'm not sure whether it's helpful for this purpose. since prunes are only recommended once a week, i started taking a tsp. of magnesium citrate each morning and am now having a BM most days.I converted most of the first batch of yogurt into yogurt cheese, as a treat. because before BTVC, I had never found a recipe for lactose-free cheesecake. i've kept a constant weight of 124-126 since the 2nd week on the diet. i had lost about 5 pounds that first week. i eat constantly and it's lots of eggs and cheese and cheesecake. i'm very happy to have a constant weight, be able to eat what i want, be satisfied and not gain weight.The good news is that I am convinced that I will be able to stay on this diet for a long time. And I am trying to persuade my husband to join me on this. So far, he has been happy to share the chicken soup and cheesecake. Actually, if I can get him to eat only SCD-legal desserts, even if he makes no other changes, I believe that his health will improve. i was really depressed after my divorce but one good thing is my ex is an extremely picky eater and i would have never been able to stick to this diet cooking for

him too. my 6 yo daughter isn't quite as picky as her daddy so she's a little easier to deal with. i'm hoping i can get her SCD at my house anyway, i'm sure it will help her. Misty Kimble, CD, SCD - Jan 5 08 .
