mayonnaise and coconut oil questions, was Re: New

Hi Mara. Just out of curiosity, why do you and others on SCD use safflower

oil or sunflower oil in mayonnaise? I've noticed that the mayonnaise recipes

in the SCD recipe books I have checked also use these oils. I don't use mayo

any more, but when I made it from scratch several years ago, I always used

extra-virgin olive oil. Isn't olive oil considered a good oil for SCD

purposes?

I'm interested also in your comment that extra virgin coconut oil is a great

anti-inflammatory. My blood test markers for inflammation are very high at

present, and I am taking a combination of anti-inflammatory supplements,

including lots of EPA-DHA from fish oil, and pure curcumin (the active

ingredient in turmeric). But I had never heard of coconut oil having that

property. I really need to learn more about fatty acids and prostaglandins.
