( I am still new and in phase 1 still) I make my own, and you're right: the dried onion and garlic is sometimes easier on the system than the fresh. I have a recipe for an easy guacamole which calls for X amount of chopped red onions. Harry (my husband) and I liked it very much, but the onion didn't like us. (And HE nominally, doesn't have gut issues.) So the next time I made it, I halved the fresh onion. OK, good, and didn't bother us as much, but not as spicy-licious. So the third time, I dried and powdered some red onion and used about a third the amount of powder that it called for in fresh, and it had just the right taste, AND the dried onion didn't bother us.
