Guest guest Posted February 21, 2008 Report Share Posted February 21, 2008 Hi guys, I have this recipe for making barley in the crock pot that I was thinking maybe I could modify a bit and use lentils. Recipe is below. 2 questions: 1. Do you think it will work? Or are barley and lentils just too different? 2. If you think I could, how would you modify it? I'm guessing I would need less liquid since lentils don't absorb the water like barley. But how much less? And what about the cooking time? Here's the recipe: 1 cup uncooked barley 1 1/2 cups V8 (I would use tomato juice) 1/2 tsp salt 1/4 tsp pepper 2 medium stalks celery, sliced 1 medium bell pepper, chopped 1 medium onion, chopped 1 can (14 1/2 oz) vegetable broth (I was thinking I would use some chicken broth that I have in the freezer) 4 med green onions, sliced 1/4 pine nuts, toasted Mix all ingredients except green onions and nuts in slow cooker.
