Hi All,

I just need to vent about my tortilla experience! My son's preschool

teacher told me yesterday that they were making tortillas in class

today and could I please bring him something so he won't be left out.

I remembered that there is a tortilla recipe in " Eat Well Feel Well " so

I said sure. After the kids went to bed, I made the batter per the

recipe and pulled out my tortillas press. Thats when I realized that a

press and an iron are not the same thing, so I had no way to cook my

tortillas. I tried to fry like a pancake, but the dough was too sticky

to spread out. I tried to put parchment paper in my press to flatten

them out first, but the dough was to thin to transfer to the pan. I

started to panic. I had tortilla dough pressed out in a perfect circle

between my parchment sheets. I contemplated putting the parchment in

the skillet, but chickened out. I had a nervous breakdown and a glass

of wine instead! In desperation, I threw my circle in the oven at 350

and left it for 5 min. I made a perfect cracker. PANIC! More wine,

more deep breathing- it is now 10:30 and my husband just wants to keep

him home from school. As a last effort, I lower the oven to 290 and go

for 3 minutes. It is a little underdone, so I flip it and go 1 more

min. Perfect tortilla!!! After all of my accidents, I managed to have

enough dough for 2 good ones. Boy was the teacher impressed. So if

any of you have not made the recipe because you don't have the iron.

bake the flattened tortillas between parchment sheets for 4-5 min at

290 and they are reaaly good!
