Hi Leah,You have to be very careful buying chicken and turkey from the store. Even though it is organic and free range does not mean that it hasn't been injected or marinated in some sort of broth. You have to check the label very carefully because it is usually in small print but will say something to the effect of 'contains up to 12% broth solution' or 'enhanced with up to xx% broth solution'. I have never found a turkey at the store that didn't have broth in it. For Thanksgiving I got a turkey from a local farmer. I was able to find chicken that wasn't injected at HEB. About your baking question....yeast is illegal. Most recipes call for baking soda to help them rise. It doesn't work like yeast and you're not going to

get a light airy bread like you do with yeast and flour but it's still good. I've never met an almond flour cake, cupcake, cookie, etc that I didn't like :-)Best wishes,Kim H.husband, , CD 1999SCD 2002 Questions about baking

Is there any kind of yeast you can use for baking? I'm still not

sure whether yeast is legal or not, although I'm assuming not. If yeast

cannot be used does anybody know of another way to make stuff rise? I'm

wanting to make a sticky bun, although I'm nowhere near using nuts yet

lol. I'm just trying to devise my recipe now. Another question I had

was that I found out I cannot tolerate chicken. Automatically, I went

and bought a whole turkey and found I had the exact same reaction! Now

the reaction seems to be the worst when I use whole birds, but I've

completely cut both out. It just makes me wonder if the whole ones are

chemically treated even though I bought organic free range. Also I cut

out chicken eggs, but recently bought some duck eggs from a local

farmer and did perfectly! So anyone with chicken egg problems this

might be a good idea to try. Leah SCD 02/24/08
