So I found the Almond Rocca recipe on Pecan Bread and decided to try it. Got to tell you I've never made anything but the most basic fudge in the past so I have no candy skills. This recipe was super easy to follow and turned out delicious and perfect!!! I didn't have a candy thermometer so used a meat one that only went to 220F but figured it would get me most of the way there, which it did. When it turned dark brown and started smoking a little I figured I was there and I was. So pleased with this, I just had to share.
