There are also mixes that you can use to make waffles, pancakes, etc. My son has been on the diet for over a year. At first he wouldn't eat the breads, pancakes, etc but after being on the diet for about 8 months I think he kind of " forgot " how the " real " stuff tastes and the consistency and now eats the breads w/peanut butter and jelly and likes the pancakes. I think for some kids it can take a while for their tastes to re-adjust to the different tastes and consistencies of the GF/CF foods. At first he ate a lot of fruits, deli turkey and hot dogs but now he does eat some of the GF crackers, etc and he loves Namaste chocolate cake and Bell and GF chicken nuggets. Mine wasn't happy at first either and it took a while but I just kept offering the GF/CF food and he eventually came around. Good luck.
