It is a spicy cabbage soup with basically chicken broth and some vegetables. I'm not real experienced at figuring out what can be used as a substitute and still make a recipe come out. What can I use as a substitute for potato in a soup. Broccoli or cauliflower maybe?. I don't care if it looks or tastes like potato, I'm just not sure if the potato is needed to thicken the soup or maybe it is just used to make the soup more hearty. I hesitate to include the link to the recipe as it is not legal in its current form. I can experiment with it and if it comes out I can sent a legal version of the recipe or I can send a link off list if anyone is a cabbage lover like me. For pureed, I'd say substitute pureed cauliflower, for potato left in pieces, I'd try pieces of butternut squash or something similar. But this is just a guess, as it is very hard to come up with replacements for a recipe you cannot look at. Squashes are good -- peeled chunked zucchini, or any of the winter squashes, peeled and cooked. I've used properly soaked and cooked lentils or white beans, again depending on what other vegetables are in the soup. My current favorite potato substitute is celeriac, or celery root.
