Of course, you're aware that Elaine did not like any commercial spice mixtures because too often, they put anti-caking stuff in them. Usually corn starch or something similar. >> * I don't have problems with Old Bay and it " seems " legal to me, but I make no representations about it being legal. if you're wary of seasoning blends, please use seasoning you're comfortable with. Old Bay's ingredients are: salt, celery seed, mustard, red pepper, black pepper, bay leaves, cloves, allspice, ginger, mace, cardamom, cinnamon, and paprika. << 1 tablespoon ground bay leaves 1 1/2 teaspoons celery seed 1 1/2 teaspoons salt 1 1/2 teaspoon ground mustard seed 1 1/2 teaspoon black pepper 3/4 teaspoon ground nutmeg 1/2 teaspoon ground cloves 1/2 teaspoon ground ginger 1/2 teaspoon paprika 1/2 teaspoon red pepper 1/4 teaspoon ground mace 1/4 teaspoon ground cardamom is a mix I've used on occasion, although I'm not a particular fan of Old Bay, except when I'm having steamed crab claws in land! Your list has allspice and cinnamon; this one has ginger, and since ingredients are typically listed in order of amount, possibly slightly different proportions of the ones it has in common. Perhaps, as an Old Bay fan, you could let me know what you think of this mix. — Marilyn New Orleans, Louisiana, USA Undiagnosed IBS since 1976, SCD since 2001 Darn Good SCD Cook No Human Children Shadow & Sunny Longhair Dachshund
Guest guest
Hi Marilyn, Yes, I know Elaine warned against spice mixes and, in general, I avoid using them. I would be delighted to try your mix as a " for sure " legal alternative to Old Bay. Thanks for sharing the recipe!
